Vegetable quiche
It's high protein, high vegetable, low fat and no carbs.
One onion, chopped
Eight baby marrows (courgettes, whatever you call them), sliced
A punnet of mushrooms, sliced
One yellow pepper, sliced or chopped
One red pepper
You can have one green pepper too, but I don't because they repeat on my sister. Hahahahahahahaha
Nine eggs
Two tubs fat free cottage cheese (smooth)
Saute the chopped onion in avocado or olive oil. Do not brown them. Just lightly cooked.
Add green/yellow/red pepper, cook a little more. Add baby marrows and mushrooms and cook lightly.
In a bowl, mix the eggs and cottage cheese well with a whisk.
Add vegetables to the egg mixture and bake at 200 C for 30-45 minutes. Lightly brown on top and firm.
Serve with a salad, lightly dressed with olive/avocado oil and balsamic vinegar.
Nice. Nine eggs, though! WOW.

It makes eight servings, so it's a little over one egg per serving. It was yummy too.
Ah, right! I thought you were going on some frenzied egg-binge for a moment there...

Hahahaha! You can add fried bacon if you want, but I like veggie things.
